"Chipotle"-style Bowls


One fast-food type of place that I cannot get enough of is Chipotle.  The flavors are always so...bright...in their food.  Is that the right word?  I think it is. 
I enjoy the "make your own" combos that they offer there, allowing you to add your own ingredients and leave off what you don't enjoy...but what's better than totally customizing your meal? Making that meal at home for a fraction of the cost AND knowing exactly how you make each ingredient!  The below recipes are just layered into a bowl, however you'd like them.  You could certainly add salsa, pico de gallo, guacamole, beef, different beans, etc...
I layered the rice, beans, chicken, 2% shredded cheddar cheese, fresh avocado, low-fat sour cream and more cilantro.

Cilantro Lime Rice
  • 1 pkg. instant boil-in-bag rice
  • Juice of 1 lime
  • 1/3 cup of chopped fresh cilantro
  • 1 tbs. butter
Cook rice as directed.
Add cilantro, lime juice & butter. 
Mix well, keep warm.

Chili Lime Chicken
  • Boneless, Skinless Chicken Breasts (I used 1 pkg. chicken tenderloins)
  • Juice of 3 Limes
  • 2 tbs. chili powder
  • 1 tbs. olive oil
  • 1/2 tbs. garlic powder.
Marinate boneless skinless chicken breasts in lime juice, chili powder, olive oil & garlic powder for at least 30 minutes-1 hour.
Grill/cook thoroughly then chop into bite-sized pieces.

 "Not-Refried" Black Beans
  • 1 can of black beans
  • 1/2 tsp. cumin
  • 1/2 tsp. black pepper
  • 1/2 tsp. chili powder
Heat medium skillet over medium-low heat.
Reserve half of the beans liquid then pour the remaining liquid & beans into the skillet.
Add spices & stir until combine.
Heat through for about 8-10 minutes, simmering to concentrate the liquid.
Using a masher, break up/mash the beans together until your desired consistency is reached.  Stir & let heat through.
If too thick (or when reheating), add a bit of the reserved bean liquid to rehydrate.
Serve & enjoy!

Uh, that's it. I'm never needing to visit Chipotle. This looks 10 times tastier!! And cheaper, too! Love it!

I made this tonight for dinner and it was a big hit. I forgot to include the beans, but even with that it was a fantastic healthy midweek dinner!
