I am a total follower...

I've been seeing these posts about the famous (infamous?) No-Knead Bread from the NY Times for a LOOOONG time now. I decided that it was time to actually try it. You will find the recipe here at The New York Times.

I had all the ingredients and a heavy enameled cast iron pot (not a Le Creuset, though that is on my dream list, wanna get me one???). I made the dough last night around 8 p.m. and it literally took a maximum of 3 minutes. You mix it and forget about it. Done. Goodnight!

I woke up to find it looking like this
perfect and bubbly and puffy. I said goodbye to the beautiful dough and went to work.

I arrived home from work and with another 1 minute task of tucking the ends in towards the center, it was off to rest again for 2 hours.
Then off to the oven...and it came out looking like this...
*cue the harp music....the angels singing....the clouds parting and the sun beaming down right on this beauty*
Speaking of singing - this bread really does! I stood there and listened to it crackle LOUDLY for about 5 minutes after I put it on the cooling rack.

You MUST try this. It cannot be any easier to get a wonderful, warm, homemade loaf of bread in your home (unless you tell your friends to try this and bring it directly over to you).

Did you use all-purpose flour or bread flour in yours? Thanks for the recipe!

I used all-purpose. It worked wonderfully, my husband and I just tried a piece and it was WONDERFUL...great crust and a wonderful texture!

I have a "no knead" recipe I've been dying to try. I'm glad yours turned out good. I'll have to try your recipe, too!

If you like the no-knead bread making method found in the NYTimes, you should take a look at Nancy Baggett's kneadlessly simple bread book. It is filled with a variety of no-knead recipes. All of the recipes that I have tried, have turned out great! The best part is not having a huge mess in the kitchen to clean up! This no-knead method just turns out such a nice loaf of bread. Check out Nancy's website www.kitchenlane.com It has a recipe archive, so you can try out some of her recipes. You can also find a link to her blog, so you can keep track of her latest activities.
