Mexican Pizzas


A quick, make-shift meal...we were out of flour tortillas and meat. So, I found a recipe for flour tortillas and decided to skip the meat and make it with refried beans, taco sauce, onions, and cheese. We make due with what we have sometimes...with Paul being sick and me not having the motivation to go the grocery store, this was a very tasty and filling meal using items we had on hand!

Mexican Pizzas

Ingredients:
  • 4 Flour Tortillas
  • 1 Can of Fat-Free Refried Beans
  • 2% Milk shredded cheddar cheese
  • Medium Taco Sauce
  • 1/4 yellow onion, diced fine
  • 2 green onion shoots - sliced thin

Directions:
Preheat oven to 350 degrees.

Spread a heaping spoon of refried beans on two tortillas, then a sprinkling of the onions, a drizzle of taco sauce and a layer of cheese and place them on a baking sheet.

Top with the other two tortillas and press lightly on top.

On the top, drizzle some more taco sauce, sprinkle green onions and top with another layer of cheese.

Place in oven for approximately 6-7 minutes until heated through and cheese is melted.

Top with sour cream or garnish of your choice!
