July 4th Flag Jello Cake

1 White Cake Mix
1 Package of Jello (I used Strawberry, but you can use any other flavor you wish)
1 Container of Cool Whip
Berries (I used Strawberries and Blackberries, because I couldn't find Blueberries!)

Make cake mix according to directions and let cool. While cake is baking, mix Jello with 1 cup of boiling water (don't add the second cup of cold water). Put in fridge or freezer to cool and thicken just a little - you don't want it to solidify at all. Poke holes in cake with a knife or fork all over. Pour the cooled liquid Jello slowly all over the top, letting it soak into the holes. Top cake with the container of Cool Whip and then top with berries. Refrigerate until ready to serve.

When you cut into it, you will have streaks of jello throughout the inside, keeping the cake moist and giving it a great fruity flavor. The Cool Whip "frosting" keeps it light and a perfect summer dessert!

Chicken Divan

This is one of my favorite recipes that my mom would make for me when I lived at home. It is simple and satisfying anytime and the leftovers are equally as delicious. You can make it and freeze it as well, just double the regular cooking time.

2 or 3 chicken breasts (boiled and shredded)
2 boxes or 1 large bag of frozen Broccoli florets - cooked as directed
1 can of Cream of Chicken Soup
1 cup of Mayo

1/2 tsp. of Curry Powder
8 oz. shredded cheddar cheese

Mix soup, mayo and Curry powder.

Place the broccoli in a layer on the bottom of a 9x13 glass pan. (These pictures show a tinfoil disposable pan, since I was making these for a friend who just had a baby).

Top with the shredded cooked chicken.

Pour the soup mixture evenly over the top.

Then sprinkle the top with cheddar cheese and bake at 350 degrees for 30 minutes.

Turkey Roll-Ups

This is an extremely easy recipe for a quick dinner...filling, comforting and satisfying, this meal is a good go-to for your regular family meal or for easy entertaining as well!

1 lb. medium sliced deli turkey (your favorite brand is fine)
1 box of Stove-Top stuffing (pre-made and cooled)
1 jar of Turkey Gravy

Lay out one slice of turkey, fill with a spoonful of stuffing and roll, enchilada style, and put in pan. Continue until each slice is full and pour gravy over the rolls.

Put in oven for 20-30 minutes until hot throughout at 350 degrees. Enjoy with your favorite side dish, but I am partial to mashed potatoes!
