Pineapple Pistachio dessert


My mom makes this recipe and I wanted something easy and light to bring to a little family gathering for the Red Wings game last night...this was perfect...quick, simple and just enough sweetness to satisfy the sweet tooth.

1 pkg. Jell-o Instant Pistachio Pudding mix
1 8 oz. container of Cool-Whip
1 can of crushed pineapple in pineapple juice (not syrup)
1 small bag of nuts of your choice (I used crushed peanuts)
Optional - miniature marshmallows

- In medium bowl, open packet of pudding and empty into bottom.
- Add entire can of pineapple and juice
- Add bag of nuts
- Mix these ingredients together and after well mixed, fold in entire container of Cool-Whip (and optional marshmallows, which I omitted)
- Chill in refrigerator to let flavors mix and serve when ready!
